
Tomato Soup Recipe for dipping Grilled Cheese in...YUM

Tomato Soup is always shown as a comfort food. It's savory, hot and delicious! In my other blog post for savory sandwich maker recipes, I have a recipe for grilled cheese that suggests eating it with a bowl of hot tomato soup. So, of course, I had to add this recipe to compliment it!
Here’s a super easy and quick tomato soup recipe that’s perfect for dipping your grilled cheese in.
Easy Tomato Soup Recipe
Ingredients: ( all things that you have on hand at home )
- 1 can (14.5 oz) crushed tomatoes (or whole peeled tomatoes if you prefer to blend them yourself) (equivalent to 5-6 small tomatoes)
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup vegetable broth (or chicken broth)
- 1/2 tsp dried basil (or 1 tsp fresh basil, chopped)
- 1/2 tsp sugar (optional, to balance acidity)
- Salt and pepper, to taste
- 1/4 cup heavy cream or milk (optional for creaminess)
Instructions:
- Sauté Onion and Garlic: In a medium-sized pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook for about 3-4 minutes, until softened. Add the garlic and cook for another 30 seconds, until fragrant.
- Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir to combine.
- Season the Soup: Add the dried basil (or fresh basil), sugar (optional), and salt and pepper to taste. Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, to let the flavors blend.
- Blend (Optional): For a smoother texture, you can use an immersion blender such as this one, directly in the pot or transfer the soup to a blender such as this one. Blend until smooth, then return to the pot if needed. (Personally I like the Immersion blender for this step)
- Add Cream (Optional): Stir in the heavy cream or milk if you want a creamy texture. Adjust the seasoning if needed.
- Serve: Ladle the soup into bowls and serve hot with your grilled cheese sandwich for the perfect dipping combo.
